What are some good books to learn chemistry from the ground up for a mathematician? I have done mathematics for most of the time, some physics here and there, now it is time to pick up chemistry, and yes I have read the wiki.

Ask yourself what aspect of chem interests you.
In principle I would believe you should get the basics of octet rule, VSEPR, Valence Bond and MO theory. First the basic pictures to get an idea what you need to expect. Then electronic structure, in which case there is one obvious book.

Bring along a basic understanding of quantum and classical mechanics, enough representation theory to grasp wigner's theorem, as decomposing your Hilbert space into irreducible representations of different symmetry is the core of most of the things happening in small molecules.

jump right in to physical chemistry and then statistical thermodynamics, and at the same time you can learn quantum chemistry and then quantum electrodynamics, and at the same time you can learn materials chemistry like semi/super conductors and all the metals and solid state stuff

literally everything else is biology and cookbook recipes

Google search just recommends me Atkins Physical Chemistry to be math oriented, which is okay but it doesn't feel like an introduction to chemistry (more like a subfield thereof). Another book I found is Pauling.

imo undergraduate books are inaccessible if you know nothing about chemistry.
pick up whatever chemistry book is taught in your local highschools to learn basic stoichiometry, nomenclature, basic organic chemistry, electrochemistry, octet rule, etc
after that depends on which area of chemistry you want to learn. btw organic chemistry is objectively the best chemistry
