if its the latter then it will just get dark after 8 minutes. Photosynthesis is limited to 750 nm, and since the visible spectrum is between 400 nm and 700 nm, its possible that photosynthesis will continue. Solar panels will still work although at a lowered efficiency as they work best in the yellow-red spectrum, which is 600-700 nm. Most of earths ecosystems will continue to function. Since UV light is outside the visible spectrum, you will still become tan by spending time outside, and you will still feel the heat of the sun.
if the sun disappears entirely, then it will get very cold fast and since the huge gravitational well of the sun now is gone from the solar system, all planets in the system will be flung away based on their current position in ellipsis and go rogue. Pretty sure kurzgesagt did a video on a rogue earth so you might want to look into that.
