They have experts that they consult on every episode, just so they can insert easter eggs, not only about quantum physics and celestial mechanics, but also about literature, philosophy, and the history of art. I don't think there is any one person who has caught every joke in R&M, even just to catalogue them would need an encyclopedic knowledge... of professors to interview.
