Thoughts on Scheck's books? I like that they cover advanced topics early on but maybe they're not great for studying? They seem a bit encyclopedic.
I've mostly given up. I'll just work through Zee's three books, try to have fun, and call it a day. Going through Susskind's series on the standard model to warm up/procrastinate.

Russell & Whithead's Principia Mathematica is not a "must" read but it is a worthwhile digression.
Newton's Philosophiae Naturalis Principia Mathematica is also not a "must" but it's also extremely interesting and worth reading.

The book mentions where it gets its materials. I'd suggest looking at Todhunter's books in particular he was big at the time.
You can also look at Hardy's course of pure mathematics.
If you like calculation the Treatise on Integral Calculus by Joseph Edwards has lots of great stuff that isn't seen too often anymore.

Start by making the set theory/proof intro part and intro real analysis optional. That's not really needed unless you're struggling.

Also some suggestions are weird. Number theory doesn't need to be before algebra. It's better after. Rosen's book that it suggests uses algebra for example.

I wouldn't replace books, I'd make big chunks of it marked optional and move things around. I gave some examples. If you tell me a particular topic you might be interested in I can tell you what I'd suggest for that, but I'm not remaking a huge chart.

Assuming you'd finished the calculus part on the chart, I'd use Hoffman & Kunze for linear algebra before anything else. Then for number theory you can go straight to a book like Niven's Introduction to the Theory of Numbers if you like a classical approach or study some algebra first via Artin's book, or Dummit & Foote. Then Ireland & Rosen's Classical Introduction to the Theory of Numbers. After that you should have a pretty good idea of where you want to go.
For combinatorics after linear algebra if you like a more CS oriented approach you can look at Concrete Mathematics, or the book Combinatorics by Merris if you want more conventional stuff. If you do like CS approaches I have to mention that Knuth's Art of Computer Programming's volume (4A) on combinatorial algorithms is great.
I don't really know much about probability and statistics, but for probability you need to study Rudin's principles of mathematical analysis, and then a book on measure theory first. I used Folland's Real Analysis in my course, it has functional analysis as well, and at the end an intro to probability.

That's a good plan. I also write up full solutions to entire books. I'm kind of a completionist. Not sure if it's legal to publish them on the internet though.
