Why is the bell curve so important? They tole us that a properly done psychological test should follow it but I don't understand why. Is it because it's just easier to get interesting results from them? Why is it important in Student's t-test? If data doesn't follow it it just doesn't work?

Have a read into the central limit theorem. If you have never seen it I can imagine it's strange why the result is as precise as it is.

Almost everything you can measure will follow this distribution, and many of the exceptions are a bit like the bell curve sliced at one point. The majority of quantifiable human traits will fall along a bell curve, and the same is true with heuristics. Lets say you use the the expansion rate of of pupil dilation as a measure for some kind of reaction or cognition. the distribution will be bell curve shaped.

This is not true and you are right to be suspicious. There is actually no reason to expect every psychological trait to follow the bell curve. Some seem to do, others don't. No big deal.

The central limit theorem is an important result in mathematics but it doesn't say that all traits follow the normal distribution. If you think it does, you need to read a texbook on statistics. It merely describes the distribution of an average of a set of iid variables, as the number of variables gets large.
