Your overcomplicating it. Just take the smallest gauge syringe you can find and suck contaminated water into it. Then when you squirt it out, nothing larger than the needle opening will pass through, effectively blocking all pollutants. For increased volume simply increase the size of the syringe.

You can drink it without the minerals it just tastes weird for some reason. Drank from a RO setup for almost a year and nothing bad happened

I'd remineralize it to be safe. The studies I've read on demineralized water are kind of inconclusive as far as drinking it goes but for cooking it definitely reduces the nutrient content of food. It also seems to affect magnesium and calcium the most, so you might not notice ill effects until later in life if you do it long term.

I don't think you actually need the minerals from the water, it's just the demineralized water leeches the nutrients from the food you cook in it faster than water with minerals in it. As far as drinking it goes the evidence seems inconclusive as to what's best.
