Since it's not on humans the quality doesn't have to be the same, just the same physical idea of getting electrical information from the brain.
In terms of equipment I think a lot of the pro medical stuff i probably probably pretty expensive, so you're probably going to making some of this stuff yourself if you can, I think it seems like a fun and do-able project if you really care about it. You could probably get away with some rip off Arduinos and rasp pis, or real ones though I hear chinese Arduinos work fine.
Most hardware stuff can be accommodated with microcontrollers and computers so you're not looking at anything too serious/difficult or at least not something that's too hard to the average person.
Make sure to check in here once in a while this sounds like a cool project.
Don't be too overwhelmed with all these things if they're new to you, that's why I think you should start slow in even lower lifeforms just to really get used to it and build some experience.
