why does some burned wood turn into grey stuff while others turn black?

You dumb as hell. Ash is the byproduct of burning things like wood and is basically everything that didn't combust mostly as oxides. Charcoal is 90% carbon and is the result of pyrolysis.

are you implying that charcoal is not formed from wood?

why is it that if I light a match it produces no ash, and purely charcoal?

Exactly. Ash is oxides of some shit in wood except carbon (which turns into co2 and co when burns). Coal is product of pyrolysis when instead of connecting with o2 carbon stays pure.
