I'm not concluding dinosaurs though I don't think. I definitely think there is a good possibility that the virus naturally jumped to humans, and I don't think that there was any sort of weaponization research going on in the wuhan lab, but if bats and bat fluids were being handled and tested, that seems like a prime candidate for where the virus could have jumped.
I've also worked in a research, and in some government funded research. The amount that the government keeps tabs on you is relatively lax. You send them an update every so often letting them know that you're hitting the gaols laid out for you so that your funding can keep coming in. You also don't make a big public deal out of every single thing you do until you want to publish it.
The argument against the lab leak is that COVID doesn't match any of the viruses on that were being tested at the wuhan lab very well. I just don't think it's beyond imagining that either they weren't 100% open about what they had on hand (could be for nefarious reasons, or because they didn't have the proper facilities to handle it all, or just because they weren't publishing anything yet), and if they were 100% honest, it's not beyond imagining that they didn't even know it was there, if it were in some fluid sample or live bat or something, or if a scientist came in contact while on a bat swabbing mission.
As for trying to cover it up after the fact, this video covers that part
