I'm interested in both subjects but I don't know what to pick. I don't care necessarily about course load but mostly on after school prospects.

probably more prospects from EE, but either way picking what interests you most will get you the most in the long-run, since you'll be inclined to try harder and advance in your field with less effort than if you were bored with the subject

If you are more interested in Aero/Fluid dynamics, do Mech/Aerospace. If you are more interested in electricity, do Electrical. However, I would also like to propose Material Science as another alternative. There is a lot of choices.
