Evolution is not about the survival of the fittest, but the survival of the fit enough. An animal is born with a mild mutation and if he survives and reproduces it will pass on its mutated genes
Repeat this billions of times and you get new species
If we do not let nature do this randomly, but take the matter into our own hands, these can be achieved extremely fast: see dog breeds or how bananas and corn changed in a few years
But this is not a complete answer as many things cannot really be explained with randomness. Lots of fossils have to be examined and rigorously categorized to understand every minute change. It also does not help that people treat evolution as part of biology when in actuality it is paleontology. Biology does not have the same tools to explain evolution, but we do so anyway, resulting in faulty proof that makes people not believe in evolution
