That is only the case, because it is the easiest way to rationalize something that is majorly unknown.
If we observe energy, or lack thereof, that is bound within certain area, we distinct all possible properties to describe it. Thus, we describe particle speed, spin, energy levels, because that is really all we can do.
So obviously, science does not *know* what things are made of, they just use models to describe it, aka. Standard Model.
