As the difficulty of a subject increases, the knowledge which an exam judges becomes more comprehensive, thereby necessitating a better memory. If the criteria for fairness in an exam is determined by it's ability to test the knowledge of the student, and memorization was necessary for the retaining of this knowledge, then it would be very fair to use the students memories to judge the student.
Her argument is flawed because that people cannot pass a course doesn't imply it is not fair, since fairness in regards to judging someones knowledge is not equivalent to fairness in regards to equivalence of outcome. This is because, while different members judged under the former can differ in outcome, the latter cannot.
Let me deride her position using her own reasoning to show it is absurd. Application based exams are not fair because they assume all students can manage many variables at once.
