Recently graduated from my bachelor's, now starting to apply for masters

Comms and signals, because signals are incredibly interesting, I also like math a lot and I'm good at this.

Currently a power engineer, want to blow my brains out every day at work, this shit isn't for me.
My advice would be to make sure you really like this, the work is tedious as shit and it's all more of the same always. It really does get boring to think about fucking power factors and motors starting every single day of your life.

Instrumentation and medical signal processing

Comms and signal processing. Intern, get familiar with script-dsp (Matlab or Python), and Linux. Look at embedded designs and get a dev board for FPGAs to play with

Breadboards, LEDs, RC cars, teardowns, etc. I don't find any of that remotely interesting, yet it seems many in the field have backgrounds with it. Think EEVlog and the indian dude who shocks himself. Is that really engineering or just masterful technician work?

Teardowns can be an exception if's of ICs dies or something deeply involved with physics & chemistry. Otherwise it's just a waste of a good product because grug can't into theory imho.

If you're unhappy with the lack of sophistication of hobby projects you see on reddit or whatever, then why not make sophisticated hobby projects? There is lots of very fertile ground here, especially when it comes to recreating old analog technologies that aren't common anymore.
If I had to guess, I would say you are a sophomore and are mostly basing your judgments here on feelings, stereotypes, and media.
Consume less media and study more, I think you'll find hobby projects that interest you.

Just finished my junior year of undergrad

DSP & ML. I really enjoy working with audio and enjoyed the math for DSP.

Didn’t get an internship this summer but may become a lab assistant working with instrumentation for some pretty cool systems. I’m also trying to build my own analog synth this summer.

I mean it’s often covered in the CS department rather than ECE department (if your school has a distinction between the two) not to mention it isn’t essential for every EE to know. My school is also making a conscientious effort to funnel a ton of money into ML research since it’s a hot field at the moment.

No, but with graduate studies

Comm. Pretty much everyone who studied with me fell in comm at the end, except those who chose power. But despite all of this, comm is a world in itself. I really love wireless.

Right now I work in communications regulation. If you love that try to learn economics (which is a really underrated science) and law. Thinking like a lawyer helps a lot. Also, the ITU is your friend. And don't forget to keep track on new technologies, at least on one kind of service.

Me. It's great to make your own circuits but I'm more a sim guy. It's probably more work and just a rather powerful PC or cloud (if you're willing to pay for it), but when you get a result is really satisfying. Considering that a lot is software defined right now, it's really close to the real stuff.

I think not very much. A lot EE uses for EM propagation is the same ME uses for heat. Btw, I know a lot of people who made the opposite, most of them power engineers interested in generation

They do. Now, it could be difficult to succeed if you don't have the right undergraduate knowledge. You probably need to study some basic electrical engineering subjects before, or while in your first courses.

Not him but there's a guy on /ohm/ that makes video synthesizer circuits. He sometimes posts webms, but he also has a youtube channel(https://www.youtube.com/watch?v=ZBEDBstWL2k).
Either way, a lot of these hobby signal synthesizer type circuits, both audio and video, can be really cool.

I love antennas (enough to stomach a fairly shit professor because he has a cool neutrino detection project). It's a very visual subject, and vector calculus is really cool
