It could just be that your body is used to processing energy this way, though. It can take 6-24 months for the cells to overhaul.
It could just come down to conditioning.
It seems pretty common to take to carbs around strenuous exercise though.
I don't know enough yet but the starch seems like something to do with gastrointestinal fermentation, alongside many other carb types. Some of them are empty, as you say.
Plant fiber seems fine but may end up doing the same thing. I'm going to attempt a diet of nuts, juicing greens, oils, and are eggs. Then feed on fish and meat when I see fit. But I use these things more behaviorally.
Each body is Different, you will have to let your body take stock. Afaik most greens around us can be consumed, but it depends on what your body is processing for energy.
I also think that our dopamine surges from luxury foods end up hijacking our natural craving impulses that intuit us towards certain foods for the sake of sustenance relative to our current efforts.
So again I usually justportion out a couple weeks where I eat utter garbage, and then go back to a cleaner diet.
You will have to experiment for yourself. I'm thinking when forced, the body will adapt
