Regarding evolution:

If hybrids are shown to be infertile. (Ligers, mules, etc)

How did humanity breed with other hominids? And how do we still have their genetics till this day?

This does not regard evolution, it's more about systematics, taxonomy and how we define species. It's more about humane semantics and the desire to define and give a meaning to everything. As a biologist I think our current understanding of systematics is pretty bad. Phylogenetical studies are repeatedly giving strange results (e.g. Testudines).
As for why, we bred with other hominids because we were still very similar and full speciation had not fully occured yet.

Yes less fertility but you only need it to happen once for useful genes to rapidly spread
