Universe Ending

First lets talk about quarks. Quarks can't be by themselves because whatever energy you use to take them apart, they end up using that energy to make itself a quark to pair up with. Next lets talk about the expansion of the universe. The universe is going to keep expanding because of dark energy and so at one point it's gonna be able to rip quarks apart. Now let's add these together. If the quarks start ripping apart by dark energy than they "convert" the dark energy into quarks which is mass. More mass=more gravity, and less dark energy=slower expansion. So that means eventually gravity is gonna win against dark energy, and that means big bounce/crunch theory is the true ending of the universe. I haven't heard anyone talk about converting the dark energy into quarks theory, so can anyone confirm if this has been thought by a real scientist.
