same reason the rain dance is a lie even if it actually rained. Our rain dance has gotten infinitely more complex and accurate but at their fundamental base they are still lies.
Also, the idea that scientific theoretical advancements leads to technology is wrong. Its the other way around. Tech is created by people who don't really understand whats going on and then scientists analyze it for their "theories"

math is not any less correct than science. in fact math doesn't even try to say anything about the physical world. if you take science to just be abstract, arbitrary systems then it is just as "true" as math.
