You mean will that person retain their "original" consciousness and self? Sure, insofar these replacement parts manage to continue the memories and other mental patterns of this person well enough that they'd still identify with their self before the process started and from others perspective they would act like the same person as well. But in fact, the fact that it's gradual doesn't matter. Destructive copying process would preserve the person as well. Or alternatively, we never preserve our selves to begin with, and never had such a thing in the first place, if you have some naive absolute and indivisible conception of it.

So long as the support cells (mechanical or otherwise) have full functionality and memory retention, then the first impulse/fire/energy from which a person is/was born is still present.
In cryonics this is true too because the person has merely reduced the "flames/energy" to a near stand still.
