Should I do Griffiths Quantum Mechanics book after completing all the problems in Griffiths Electrodynamics or just skip quantum mechanics entirely and move onto General Relativity and tensor calculus?

That depends on what you want to do.
Both topics are self-contained.
Sooner or later you should learn both qm and tensors.

God I miss listening to hybrid theory and speed running all the Griffiths problems.
Do a mix of both OP. Do 1 chapter in QM and then 1 chapter in GR.

Do you have any recommendations on which textbook has good problem set for intro to General Relativity and tensor calculus? Griffiths does not have a book on it.

get kip thorne's book on gravitation, find all the mistakes and issue a corrected edition. you'll be an intellectual hero to lot of people if you do that.
