can you suggest a pseudo science and maybe a fun entry level book for each one?
Here in europe we don’t have a general studies year and I need to choose something soon

They all seem to have overlaps with each other (obviously). I'd say if you're really in doubt you should go for comp sci due to its broader scope. Take what I say with a kilogram of salt.

For EE and CS, there isn't much better actual intro that MIT OCW's intro courses for both.
For CS in particular, the SICP book (legally free here:https://mitpress.mit.edu/sites/default/files/sicp/full-text/book/book.html) is meme'd to hell and back because it teaches design techniques over fussing over 'usability' of the tools, but it's a great book to start flexing your basic computational thinking. MIT 6.001 remains the iconic SICP intro to CS course. The intro to EE course isn't as iconic but is similarly good.

compsci and electrical engineering are probably the two that would be most useful day-to-day for you
compsci would help you fix your stupid computer, and ee might help you fix your stupid fuse box.
