Why is Analog Circuit design so difficult? What books does one recommend to learn and master this topic?

Why would you test circuits on a breadboard and not in a simulation evironment like pspice or whatever is used these days?

Pspice is notoriously bad for actually simulating stuff.

Any college level book on circuit analysis, just dont fap to the art of electronics by Horowitz. For some reason a lot of wannabe EE fags are obsessed with it but it is just a cook book and the authors show off their tricks without bothering to explain how stuff actually works. It is not a textbook.

I really like The Circuit Designer's Companion by Peter Wilson.
Sedra and Smith seems to be pretty standard.
Also I found Gray and Hurst to be very good.

If you wanted to get it go ahead. Just be aware that it is not a textbook. It is basically a collection of clever little schematics. I don't think it is a good starting point.

What are you going to design, anyway? You can learn all the theory and technique in the worth and then have nothing to use it for.
I build guitar pedals and have a hard time thinking of any other use for analog electronics.

A lot of guesswork, trial-and-error, and learned experience. It often boils down to "I've tried that before and it didn't work, so I won't do that. Maybe I can do this however?", to which one fails or succeeds then repeats the process. It's like trying to learn someone to play the instrument; they have to put in the hours themselves.

Does not work well with RF stuff due to how incredible complex component models can get just to do accurate simulations. It's something you need to do yes, but one iteration of simulation -> manufactured is in most cases impossible. Best to keep it simple then iteratively improve on it.
