Backyard astronomer. Even if I get a really nice scope, like a 10-12" SCT... is there realistically anything I can discover? Or am I just gonna be going around looking at stuff scientists with big telescope arrays already added to the NGC? With off-the-shelf filters, imaging equipment, etc, is the data I can collect even useable outside of "hey check out this neat picture on instagram"?

It's not impossible to discover new stuff, but without some kind of adaptive optics you're going to be limited to either:
1) interesting things that have already been discovered
2) uninteresting things that you are the first to discover

But you'll need a decent digital B/W camera with a filter wheel, knowledge of calibration and software stacking. If yo get a spectrometer you can REALLY go to town. But not with just eyeballs.

I'm just getting started with a DSLR and an AT72EDII so nothing crazy. Eventually I'm going to get a ZWO mono type with a filter wheel and the whole gamut of Ha, OIII, SII etc to start capturing but until then I figure I have a lot to learn.

back in the late 1990s there was a guy in oregon who used a standard SCT to do regular, automated surveying of galaxies for novae and supernovae, h collected quite a few discoveries.
asteroids are very easy to hunt for with a SCT too, but both options require cameras.

Not really, optics don't become obsolete the way other tech does. Telescopes last forever if cared for and they hold their resale value. Audio gear is mostly trendy fashionable shit that won't be worth a penny in a few years.
