Theoretically if you were able to use the best modern materials available to make any kind of sword what would you use to make it and what would you make it out of? Are there any materials that could enable you to cut through kevlar and similar materials?

Perhaps you could shoot thin ribbon of plasma out of the blade to enhance penetration on impact.
I am not sure if that would require thin slot along the length of whole blade or if it could be done differently.

youd find a way to put super high voltage on it so if it touches the person (even through kevlar) it kills them. probably carry a bunch of batteries in a backpack. itd end up being more of a bat then sword though. not really a cool answer though. youd optimize the sword for the ideal frequency to fuck with their body and high enough voltage that it will still kill you even if you are wearing boots. pretty dangerous to wield though.

Good old regular spring steel, properly tempered, will go through kevlar like butter. Modern body armour is designed to stop bullets, not blades and is actually relatively vulnerable to edged weapons.
None of this matters though because the king of all melee engagements is the pole-hammer and you don't need fancy steel for those
