Usually you would do a summer research assistantship with a professor who directs you towards a problem you will be able to solve. That or invent your own original little field, which happens occasionally.

There was a girl in the class before mine who proved some conjecture in graph theory that was 50 years old. Still a decent amount of low hanging fruit. Also Combinatorics is pretty Chad anyway.
