My favourite right now is called "Turtle Dove", it's a white tea from Yunnan. No machines involved in the production, it's simply picked, sun dried and pressed. Has a strong peach smell and sweet taste. You have to practice brewing for a while to get good at it. The biggest difference is you use lots of tea leaves with little water and short infusions, sometimes just a few seconds. I usually order from a company called White2Tea, if you're in the US you can also get a big selection from YunnanSourcing US website. If you want something to surprise you, get shu pu-erh and white tea. You'll be amazed at the variety of aromas you can find in tea. Coffee, wine, whiskey, all good. But none of them come close to the magic of camelia sinensis. Yes, one of the things I autisticly research is tea.
