Beside pen and paper, which of course is the best, what would you anons recommend as a good STEM-oriented note taking app?

I've been using Notion for the longest time now, and I think it's excellent. It's very simple, configurable, and importantly has very nice and seamless LaTeX support.

Is there a better alternative for scientific/mathematical note taking?
