My professors can only speak as fast as they write things on the board and they aren't even particularly fast at that so I can comfortably watch their lectures at 4x speed and still understand everything with only minimal pausing at certain critical moments.
When watching something about STEM on youtube that isn't in lecture format you should keep in mind that a lot of videos don't present an actually rigorous explanation of materials and are catered towards an audience that only wishes to get a superficial and intuitive grasp on the subject matter so trying to understand every nuance of the argument being presented would be a waste of time anyways.
Furthermore the speed at which you can watch and understand something strongly depends on your previous understanding of the subject matter so if you are trying to learn something completely new it would be unreasonable to expect to understand everything at a breakneck pace.
