For me this ended up being meteorology, where the tools and data you're working with are niche and tied to the US in some way, which on one hand sucks if you want to move, but it's worked out nicely for me so far
Also picking up old technologies in addition to new ones will help. In web dev for instance there's a LOT of companies in the process of trying to move over a mod_perl codebase (or php, or something else nobody wants to learn) over to a newer stack who are having trouble hiring people because nobody understands the old way of doing things. They just know how to "npm install x" and piece together code like legos. Being able to put "responsible for migrating an [x] codebase and [y] database over to a [z] stack" on your resume is great
