Because it is a rationalist dogma that reason is adequate to talk about reality. So those people invented the oxymoronic concept of ''empirical proof'', but that's just statistics disguised as some deep way to ''prove'' claims, and empirical proof is 100% rationalistically made up. An empirical proof involves lots of rationalist ideas behind it, to tie it ''to truth'' and no empiricist rely on ''empirical proof''.
''Doing an experiment'' is they way for the atheist to feel they have a secure way of eliminating claims about the world, but they did not even prove this, ie it's a just their personal dream, and second empiricists don't do any experiment because the mental apparatus to extract ''truth'' from experiments is 100% rationalist.
Atheists have still no proved that their experiment are securely invalidating claims. That's because their experiments give only statistical results utterly tied to a very precise finite database of records from their material apparatuses
