What is the science between how left-handed and right-handed people operate in everyday life?

I’m left-handed myself, and I do the majority of my tasks left-handed as well. Because of this, I always wonder if /sci/ believes in the left-handed/right-handed psychology that dominates the brain.

Is it real, or is it based on pseudoscience?

there's a very interesting book that talks about brain lateralization called The Master and his Emissary. It's more general than what you're looking for and is mostly about broad societal implications of left-right brain functioning but it's well sourced.
The short answer is that brain halves do control the opposite side of the body, and left handed people will still use their right brain mostly to control their left hand, even if the grasping/analysis functions are mostly a left-brain task.

I thought there was larger variability in whether left-handed people had language centers on the opposite side of the brain, at least compared to right-handed people

Language is on both sides for both right and left handed people. The conceptions that the hemispheres "do" different things are a little misguided. The hemispheres aren't different in what they do, but rather how they do things. The left hemisphere is what I would call autistic, since it deals with things in an abstract, fragmented, generalized, disembodied way. The right hemisphere deals with things in an embodied, holistic and deals with immediate presence.
To relate it to language, speaking naturally with implication and in a personal way is more of a "right brain" way to deal with language, whereas writing, analyzing and dealing with semantics to achieve specific meaning is a more "left brain" way to do it.
