What are some good books catered to people who don't know physics but have sufficient mathematical preparation?
I don't really give a shit about physics, I just want to see how God applies math to the universe.

as with math, there is no golden road to physics. you might have an edge on a newcomer, but you are also a newcomer, and should start where everyone starts; an intro physics book. i've seen capable mathematicians crumple when presented with physics couched in math they were comfortable with simply because they hadn't practiced fundamental physics.

my favorite intro text was Knight's Physics for Scientists and Engineers.

I know what you mean, and it's good advice. Just seems so boring, like reading a children's book after Milton. But I guess one needs to walk before running. Should I start with classical mechanics or electromagnetism?

Your reply mirrors my experience, from a mathfag who got repeatedly rekt trying to self study and continually dropping lower level until taking an intro course on freshman physics.

However, having completed the freshman year covering intro to what I believe is referred to as Newtonian motion (kinematics n shit, aka everything is a point plus some constants), then intro thermo/gas/waves/light/electricity&mag, where do you recommend I go next? Perhaps my ego still hasn't been lost, as I'm again yearning to leverage my maths to power level physics. I will say I've gotten MUCH better at physics and frankly have shocked myself in the last 6-8 months. I feel I can now comfortably fit this shit in my head and approach it in a 'physics' not 'math' manner.

I'd ultimately love to appreciate concepts such as classical mechanics, quantum mechanics, thermodynamics, electricity and especially general relativity, special relativty and quantum field theory (the 'big pciture' stuff.

The doors open substantially after intro study. I'd suggest Griffith's Introduction to Electrodynamics. Other options are texts focused on classical mechanics (Taylor is a good one) and thermodynamics (unfortunately I don't have a good reference). I'd hold off on quantum until getting good at both classical and electromagnetism, since those are the backdrop of developing a quantum theory.
