Groups of fossils, fossilized feces, eggs, struggle signs and so on, tells you what these animals ate, who preyed on them, and how the social relationships looked like.
There's plenty of proof to conclusively know that dinosaurs evolved into birds and how, since plainsrunning was a common trait of these intermediate species.
It's not that hard to grasp, really.
