Mercury only rotates at around 10.9 kilometres per hour. In practice you would only need to walk at a brisk pace to outrun the sunrise and stay shielded from the sun. And since Mercury is very small, the distance between daylight and darkness is quite small, only a little over 100 metres
This means that we could colonize Mercury, if we built a mobile base to stay in darkness. Around 150 metres behind the base would be a wagon carrying solar panels to provide energy to the base. Since Mercury is so close to the sun, the panels would be able to provide ample energy, and the base could stay in motion indefinitely, slowly crawling forward at 10.9km/h
