Dunno. The fact that we like when chords resolve doesn't specifically relate to science afaik. The fundamental tones of any given note in their natural state (that is the most easily heard ones) are dominant 7 chord. Theory tells us that should want to move, but why? I'd consider that a philosophical or anthropological question, not science or math per se.

This is also really more of a cultural phenomenon than anything else. It's really only in Western music, and even then only a specific subset of Western music that has a concept of cadences or even really functional harmony as a whole.
