How do I learn all the bookwork proofs?

I'm great with definitions, statements of theorems etc and ok with assignment sheet questions, but I can't for the life of me remember the proofs from the lecture notes. It just seems like there can be any number of tricks to them and no standard way of doing them, and as soon as I learn one I just forget it the next day. Do I just sit down and learn every single trick from every single proof by memory? Is that possible when you're doing 8 modules, each of which has 60+ pages of notes to learn?
