Profs are generally hired for their competency on the subject, and teaching is a different skillset that some have taken the time to master and some haven't. Youtube is a competitive space where only those who are good at conveying ideas get views.

The problem is the students. Students watch a YouTube video to learn, so they actively engaged in the material. They sit in a lecture to anticipate what's on exams, and mindlessly take notes meaning they neither pay attention to the lecture nor do they lear. Students are shooting themselves in the foots. If they treated lecture like they did YouTube videos they'd be learning like they're supposed to.

Most professors don't care that much about teaching and have no training in it. Ideally you should self-study the subject before a lecture and use the lecture as an opportunity to ask questions about the part you did not understand on your own. Youtube pajeets make good videos but you can't really interact with them when you hit a roadblock.
