I usually go with populations of the same species capable of interbreeding separated by geography with each evolving for specific traits for their environment.
Eskimos and abbos for example, both have a huge visual cortex that they evolve to see better in this flat, barren, unicolored lands.

Africans evolved their melanin rich skin and better performing muscles. This is why they dominate sports.
