Ok but why would dust form specifically behind my pillow like that? Or rather around it I suppose since there is a blank spot in the middle. Could it be that the edges of my pillow were catching dust?

Yeah most likely. Dust accumulates wherever it can especially where there's nothing displacing it.

If it doesn't wipe away it is mould. Mould forms on walls with high humidity, and if you breathe out for 8 hours against a wall you will supply a lot of humidity.
Either put a dehumidifier in your room or sleep with your head further away from the wall
