It relates things nicely to a bell curve.
It's a lot easier to calculate.

Std dev is the square root of variance. Variance is very useful for many things.
Also at higher levels absolute value is hard to work with because it has no derivative at 0.

Why would MAD not relate things nicely to a bell curve?

I've started reading through https://en.wikipedia.org/wiki/Variance and it reads to me so far like it starts with the notion of squaring the deviation. Why square the deviation in the first place? Is all this stuff built around avoiding absolute values because they're totes awkes for calculus? For what reason are they totes awkes for calculus?

The bell curve is based on the standard deviation, not the MAD. If you only know the MAD, then adding values up doesn't work nicely with the central limit theorem and your mean value doesn't have nice properties like converging to a bell curve.
