Because chemistry has so many industrial applications that if you are really good at doing and explaining it there are way better jobs than teaching, namely doing it in industry and explaining it to people with money seeking to apply chemistry in industry.

Unironically, this. Also most practical chemistry is extremely difficult from a quantum mechanical point of view, so you get some rules without any explanation

lol, eric jacobson, dean toste and martin burke among many others do those things.

the problem with this thread is that OP asked a question that was too broad, and not specific.

OP, what is the 'job'?
Is the job lecturing to undergrads, or is it publishing papers, or is it making money?

If you're talking about intro chem, it's because all the professors are way overqualified (have phds just to teach people how to balance a chemical equation). So they usually skip parts when explaining
