MULTIPLE QUESTIONS:
I've been looking to try and find what the non-stick coating on this specific product is, "Farberware Cookstart Aluminum DiamondMax Nonstick Square Griddle". Can't find anything on it.

And also how safe the coating is if scratched off its surface?

And in general if I should simply avoid non-stick coatings.

The "diamond"/"granite"/"ceramic" coatings are silica sol gels https://en.wikipedia.org/wiki/Sol%E2%80%93gel_process it's safer than teflon/ptfe both in terms of consuming it when scratched off and in terms of what it produces when you overheat it. The nonstick performance is just amazing when it's new, but performance degrades pretty quickly. I'd say don't expect it to last more than 2-3 years.

It's a ceramic coating, likely containing some amount of diamonds though the name could just be a marketing ploy.

About as safe as your plates, provided you purchase from a reputable manufacturer in US or EU at least.
