Sup my fellow scientists.
So I was checking out NutritionData.com.
And I realized the fat fraction never total up to 100%.
For example in pic related (dark turkey meat) there is 10.1g of total fat. But 3.4g + 2.3g + 3.0g = 8.7g.
For nearly every high fat food I checked the totals are nowhere near 100%.
What are these missing fats?
I was thinking for plant foods some of these would be essential oils, and in animals foods it might be things like lecithin and cholesterol. But these explanations are still not enough.
