It depends on the direction of the voltage and the direction of the current
A power supply has (conventional) current enter the lower voltage end and leave the higher voltage end
An electrical component has current enter the higher voltage end and leave the lower voltage end

As a sink electrons are getting pushed in from the - terminal of a battery so it is also -.
