if fluids are in-compressible, how can water be kept under pressure? Wouldn't any container you tried to fill with more water than its available volume just explode?

Did my physics lecturer lie to me and water is actually compressible to an extent or what?

It can't really, pressure vessels explode all the time, especially extremely dangerous water heaters that are basically bombs waiting to rocket through 2 storeys of a house and kill someone.

Yes and no. Water is compressible same with steel or granite. The reason your teacher says it is in-compressible is that most other things that would be in a pipe system with water like steam or air the water is so close to in-compressible that the math doesn't really change by taking into account the tiny amount of volume change for a given pressure change.

If you had a box of water and stood on top it's under pressure but doesn't shrink (much) because water doesn't compress and it doesn't explode unless the box is made of something weak like paper.

So what happens to the water inside, do the molecules bounce around a little faster? Is that the source of the strain on the walls of the container or what we would normally call pressure?

It is marginally compressible. Obviously the energy must be stored in the medium somehow (besides just the heat). It's just convenient in a range of scenarios to neglect it.

Well more likely still the pressure would quickly increase once full and then your pump would fail.

Water "pressure" comes from there just being a height of water over a pipe with a small outlet so it can't all drain at once, that's really it. You could say gravity provides the pressure because water has mass and is being pulled down, though I imagine you can also have pressure vessels holding water under pressure in space, i'm not quite sure how that would work.

You can think of pressure as the forces as a result of molecules hitting the wall. But you must account ( like somebody else stated) for hydrostatic pressure - which is a result of the mass of the fluid above your reference height. Pressure in a fluid can be created from movements of solids inside the fluid, pumps and such, or from hydrstatic gravitational forces from the fluid above you.

Ya if it couldn't handle the pressure.
In a closed system the compression force would go into stress on the pipes.
Like someone else said, it would be like filling a pipe with metal and trying to compress it.
In an open system it shoots the water out of the shower faster.

There is no such thing as a truly incompressible substance. The closest thing are really high moduli or energy barriers, but it's never absolute. Don't think the approximations you were taught are the physical reality.

In the case of pressurized sprayers you're not really compressing the liquid, you're compressing air or some other gas.
