Why can't we cure their symptoms? Yes it's genetic and they are hypermobile, but shouldn't humanity find a way to cure their pain and muscle soreness, brain fog and sleep problems?

Yes

Probably. There was a recent study of its use for SCD and Transfusion dependent b-Thalassemia, so I see no reason why EDS which has very simple gene targets could not be one of the next ones.
