Why does current lag voltage in an inductor? I understand that when you pass a current-carrying conductor through a magnetic field, a voltage is induced, but it doesn't that mean the current comes first?

Lenz law. Inductors impede current. This means current lags the voltage. In contrast, consider capacitors. They want to accumulate charge, and hence current will lead the voltage.

Depends on what way you want to look at it. Intuitive way is to say magnetic fields don’t like to change. Changing the current changes the magnetic field. Another way to see it is that static magnetic field is free but changing magnetic field is not free.
