Combinatorics: van-Lint and Wilson's book, Stanley's book
Number theory: I'm inclined to say there are no good undergrad number theory textbooks, so you should just study Artin's Algebra and learn the salient parts of introductory number theory from there.

Nonetheless, you might find good mileage out of Stark's book and studying quadratic reciprocity in another book like Rosen's.
