Or perhaps they will just wing it, using what tangible wealth reserves they possess to basically Dwarf fortress a survival enclave in a defensible location which has enough natural reserves. Somewhere like New Zealand for example which has relatively young agricultural land and some mineral reserves.
You could expect such survivalists to take a good selection of the very brightest and most skilled with them. Then following the survival and consolidation phases they could rebuild. Something of technocratic authoritarian state would likely emerge. With absolute political power and limiting the population ( and its consumption ) to only what is absolutely necessary the remaining natural resources could be carefully managed. Then its not inconceivable you could be looking at a state of a few tens of millions who devote most of their spare output towards science and space exploration. Perhaps a few such places around the world living in similar enclaves cooperating towards in this goal, and casually exterminating whatever barbarians hordes threaten to repopulate the lands in between.
Imagine. Nothing wasted on unneeded military hardware. Nothing wasted on keeping parasites alive. Nothing wasted on frivolous consumerism.
So its not impossible. Perhaps it might take until the 25th century or even longer.
But likely? Hardly I think. More likely extinction. Probably a better chance of cockroaches evolving into sentience and escaping the gravity well before the sun burns out.
