Most people are used to dead bodies being buried or cremated, etc. Being eaten is quite unusual and people are uncomfortable with unknown practices, especially if they are this much more morbid.
Even more so, most people eat the meat of farm animals. We breed them to eat them, that is their sole purpose. A lot of people get upset when they hear about cats or dogs being eaten in foreign cuisines. The reason for this is most likely that humans associate cattle and other farm animals as meat and pets as affectionate companions. Humans being cooked and eaten in a very similar way to beef or pork puts humans on an equal footing with animals (those that are not seen as conscious, emotional beings). This association makes people very uncomfortable, as it makes them believe whoever's eating human flesh values living people similarly low, even if the cannibal never killed anyone. At least that's my hypothesis.
